1 cup mixed frozen berries (such as strawberries, blueberries, and raspberries)

2 cups Greek yogurt (plain or vanilla)

1/4 cup honey or maple syrup (adjust for sweetness)

1 tsp vanilla extract

1/2 cup almond flour (or any flour of choice for a gluten-free option)

1/2 cup rolled oats

1/4 cup coconut sugar (or brown sugar)

1/2 tsp baking powder

Pinch of salt

1/4 cup coconut oil, melted (or unsalted butter)

Optional: shredded coconut or nuts for garnish

Prepare the Berry Yogurt: In a medium bowl, combine the frozen berries, Greek yogurt, honey, and vanilla extract. Using a fork or a spatula, gently mash the berries into the yogurt until just combined. Set aside to allow the berries to thaw slightly and mingle with the yogurt.

    Make the Cookies: In a large bowl, mix the almond flour, rolled oats, coconut sugar, baking powder, and salt. Add the melted coconut oil and stir until the mixture resembles a wet dough.

      Preheat the Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.

        Form the Cookies: Using a tablespoon, scoop out the dough and roll into balls. Place them on the prepared baking sheet, spacing them about 2 inches apart. Flatten each ball slightly with the back of the spoon for a more cookie-like shape.
