2 ripe bananas, mashed

1 cup rolled oats

1/2 cup almond flour (or oat flour)

1/4 cup maple syrup or honey

1/2 teaspoon vanilla extract

1/2 teaspoon cinnamon

1/4 teaspoon salt

1/2 cup dark chocolate chips (optional)

1 cup Greek yogurt (for filling and serving)

Fresh berries (for garnish and added flavor)

Instructions
 

Preheat Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    Mix Ingredients: In a large bowl, combine the mashed bananas, rolled oats, almond flour, maple syrup, vanilla extract, cinnamon, and salt. Stir until all the ingredients are well mixed. If you’re adding dark chocolate chips, fold them in now.

      Form Cookies: Using a spoon or cookie scoop, drop rounded tablespoons of the dough onto the prepared baking sheet, spacing them about 2 inches apart. Flatten each scoop slightly with the back of the spoon.

        Bake Cookies: Bake in the preheated oven for 12-15 minutes, or until the edges are golden brown. Remove from the oven and let cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

          Prepare the Filling: While the cookies are cooling, prepare your filling by mixing Greek yogurt with a splash of vanilla extract or honey for sweetness, if desired.

            Assemble Sandwiches: Once the cookies have cooled, take one cookie and spread a generous amount of the Greek yogurt mixture on the flat side. Top it with another cookie, flat side down, to create a sandwich. Repeat until all cookies are used.

              Freeze Sandwiches: Place the assembled cookie sandwiches on a baking sheet and freeze for at least 1 hour, or until firm.
