2 ripe bananas

1 cup mixed berries (strawberries, blueberries, raspberries)

½ cup Greek yogurt (vanilla or plain)

¼ cup honey or maple syrup

½ teaspoon vanilla extract

1 cup granola (your choice, preferably with nuts and seeds)

4 slices of whole-grain bread (or nut butter for a gluten-free option)

Pinch of cinnamon (optional)

Chopped nuts or seeds for additional crunch (optional)

Instructions
 

Prepare the Bananas: Peel the bananas and slice them horizontally into ¼ inch thick rounds. Set aside.

    Make the Berry Mixture: In a medium bowl, combine the mixed berries, Greek yogurt, honey (or maple syrup), vanilla extract, and a pinch of cinnamon if desired. Gently stir until the berries are well-coated.

      Assemble Sandwiches: Take two slices of bread and layer them with banana slices evenly. Spoon a generous amount of the berry mixture on top of the banana slices.
