Fresh Tomato Basil Frittata

6 large eggs

1/4 cup whole milk

1 cup cherry tomatoes, halved

1/2 cup fresh basil leaves, chopped

1/2 cup shredded mozzarella cheese

1/4 cup grated Parmesan cheese

1 small onion, finely chopped

2 cloves garlic, minced

2 tablespoons olive oil

Salt and freshly ground black pepper, to taste

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Sauté Vegetables: In a large, oven-safe skillet, heat olive oil over medium heat. Add the chopped onion and sauté until translucent (about 3-4 minutes). Stir in the minced garlic and cook for another minute, until fragrant.

      Prepare Tomato Mixture: Add the halved cherry tomatoes to the skillet and cook for about 2-3 minutes, just until they start to soften. Season with salt and pepper.

        Whisk Eggs and Milk: In a medium bowl, whisk together the eggs, whole milk, chopped basil, salt, and pepper until well combined.

          Combine Ingredients: Pour the egg mixture over the sautéed vegetables in the skillet. Gently stir to distribute the tomatoes and onions evenly.

            Add Cheese: Sprinkle the shredded mozzarella and grated Parmesan cheese over the top of the egg mixture.

              Cook on Stovetop: Allow the frittata to cook on the stovetop for about 5 minutes, until the edges start to set.

                Bake: Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the center is set and the top is lightly golden.

                  Cool and Serve: Remove from the oven and let it cool for a few minutes. Slice into wedges and garnish with extra basil leaves, if desired. Serve warm or at room temperature.
