Fresh Summer Fried Rice

2 cups cooked jasmine rice (preferably chilled)

1 cup fresh corn kernels (about 2 ears of corn)

1 cup snap peas, trimmed and halved

1 cup diced bell peppers (mix of red, yellow, and green for color)

1 medium zucchini, diced

2 green onions, chopped (white and green parts)

2 cloves garlic, minced

2 tablespoons soy sauce

1 tablespoon sesame oil

1 tablespoon vegetable oil

2 large eggs, lightly beaten

1 teaspoon fresh ginger, grated

Salt and pepper, to taste

Fresh basil or cilantro for garnish

Prepare the Ingredients: Start by chopping all the vegetables and keeping them ready. If you haven't cooked the jasmine rice yet, prepare it ahead of time and allow it to cool in the refrigerator, as cold rice works best for fried rice.

    Heat the Pan: In a large skillet or wok, heat the vegetable oil over medium-high heat. Once hot, add the minced garlic and grated ginger, cooking for about 30 seconds until fragrant.

      Add the Vegetables: Toss in the diced bell peppers, zucchini, fresh corn, and snap peas. Stir-fry for about 3-4 minutes, or until the vegetables are tender but still crisp.

        Scramble the Eggs: Push the vegetables to the side of the skillet, then pour the beaten eggs into the empty space. Scramble the eggs until fully cooked, then mix them with the sautéed vegetables.

          Add the Rice: Add the chilled jasmine rice to the skillet, breaking up any clumps. Stir well to combine with the vegetable and egg mixture.

            Season the Rice: Pour the soy sauce and sesame oil over the rice. Season with salt and pepper to taste. Stir everything together until the rice is heated through and well-coated with the sauce.

              Finish with Green Onions: Remove the skillet from the heat, stir in the chopped green onions, and mix everything. Give it a final taste adjustment with additional salt or soy sauce if needed.
