Ingredients

4 large Portobello mushrooms, stems removed

2 cups cherry or grape tomatoes, halved

1 cup fresh mozzarella balls (bocconcini), halved

1 clove garlic, minced

1 tablespoon balsamic vinegar

2 tablespoons olive oil

1 cup fresh basil leaves, chopped

Salt and pepper, to taste

1/4 teaspoon red pepper flakes (optional)

Balsamic glaze, for drizzling (optional)

Instructions

Prep the Oven: Preheat your oven to 375°F (190°C).

Prepare the Portobellos: Clean the Portobello mushrooms with a damp cloth. Brush both sides with olive oil and season with salt and pepper. Place them dome-side down on a baking sheet lined with parchment paper.

Mix the Filling: In a large bowl, combine the halved tomatoes, mozzarella balls, minced garlic, balsamic vinegar, remaining olive oil, chopped basil, salt, pepper, and red pepper flakes (if using). Stir well to combine all the flavors.

Stuff the Mushrooms: Spoon the Caprese mixture evenly into each Portobello mushroom cap, generously filling them with the tomato and cheese mixture.

Bake: Place the baking sheet in the preheated oven and bake for 20-25 minutes, or until the mushrooms are tender and the cheese is melted and bubbly.

Finish and Serve: Once cooked, remove from the oven and let cool for a couple of minutes. Drizzle with balsamic glaze, if desired, and garnish with extra fresh basil leaves.

Enjoy: Serve immediately as a delightful appetizer or a light main dish. Pair with a crisp salad or some crusty bread for a complete meal.
