1/2 cup cherry tomatoes, halved

1/4 cup pine nuts, toasted

2 cloves garlic, minced

1/2 cup extra virgin olive oil

1/4 tsp sea salt

1/4 tsp black pepper

1/2 cup fresh mozzarella balls, halved

2 tbsp balsamic glaze (for drizzling)

Optional: Crushed red pepper flakes for garnish

Prepare the Zoodles: Using a spiralizer, create zoodles from the zucchini. If you don't have a spiralizer, you can use a vegetable peeler to create thin ribbons. Place zoodles in a colander, sprinkle with a little salt, and let them sit for 10-15 minutes to draw out excess moisture. Pat dry with paper towels.
