4 slices of thick brioche bread

2 large eggs

1/2 cup milk

1 teaspoon vanilla extract

1 teaspoon cinnamon

1 cup cooked chicken breast, shredded or sliced

4 slices of cheddar cheese

2 tablespoons mayonnaise

1 tablespoon Dijon mustard

2 tablespoons butter

Maple syrup (optional, for drizzling)

Fresh spinach or arugula (for garnish)

Salt and pepper to taste

Prepare the French Toast Batter: In a bowl, whisk together the eggs, milk, vanilla extract, cinnamon, and a pinch of salt.
