4 boneless, skinless chicken thighs

2 large onions, thinly sliced

3 cloves garlic, minced

1 cup beef broth

1 cup Gruyère cheese, shredded

1 tablespoon olive oil

1 tablespoon butter

1 teaspoon thyme (fresh or dried)

1 teaspoon balsamic vinegar

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Crusty bread (optional, for serving)

Instructions
 

Sear the Chicken: In a large skillet, heat the olive oil over medium-high heat. Season the chicken thighs with salt and pepper. Add the chicken to the skillet and cook for about 6-7 minutes on each side until golden brown. Remove from the skillet and set aside.

    Caramelize the Onions: In the same skillet, reduce the heat to medium and add the butter. Once melted, add the sliced onions and a pinch of salt. Cook for about 15-20 minutes, stirring occasionally, until the onions are soft and caramelized.

      Add Garlic and Thyme: Stir in the minced garlic and thyme, cooking for an additional minute until fragrant.

        Deglaze the Skillet: Pour in the beef broth and balsamic vinegar, scraping the bottom of the skillet to release any browned bits. Bring the mixture to a simmer.

          Nestle the Chicken: Return the chicken thighs to the skillet, making sure they are coated with the onion mixture. Cover and let simmer for about 5-10 minutes until the chicken is cooked through (internal temperature should reach 165°F).

            Add the Cheese: Remove the lid and sprinkle the shredded Gruyère cheese over the chicken and onion mixture. Cover again for 2-3 minutes until the cheese is melted and bubbly.

              Serve: Remove from heat and garnish with fresh parsley. Serve hot with crusty bread on the side, if desired.
