4 ears of fresh corn on the cob

8 oz of your favorite pasta (e.g., penne or fusilli)

1 cup cherry tomatoes, halved

1 medium zucchini, diced

2 tablespoons olive oil

2 cloves garlic, minced

1/4 teaspoon red pepper flakes (optional)

Salt and pepper to taste

1/2 cup fresh basil, chopped

1/2 cup grated Parmesan cheese

Zest of 1 lemon

Juice of 1 lemon

Prep the Corn: Start by shucking the corn and removing the silk. Bring a large pot of salted water to a boil. Add the corn to the pot and cook for about 4-5 minutes until tender. Remove the corn and allow it to cool. Once cool, use a sharp knife to carefully slice the kernels off the cob.

    Cook the Pasta: In the same pot of boiling water, add the pasta. Cook according to package instructions until al dente. Reserve 1 cup of the pasta water, then drain the pasta and set aside.

      Sauté the Vegetables: In a large skillet over medium heat, add the olive oil. Once hot, add the minced garlic and red pepper flakes (if using), and sauté for about 30 seconds until fragrant. Add the diced zucchini and sauté for another 3-4 minutes until slightly softened.

        Combine Ingredients: Add the cooked pasta to the skillet along with the corn kernels and halved cherry tomatoes. Pour in the reserved pasta water a little at a time until you achieve desired sauce consistency. Stir gently to combine.

          Season & Serve: Remove from heat, then stir in the chopped basil, grated Parmesan, lemon zest, and lemon juice. Season with salt and pepper to taste.

            Freezing Instructions: If you plan to freeze, allow the pasta to cool completely. Portion into airtight freezer containers, leaving some space for expansion, and freeze. To serve later, simply thaw overnight in the fridge, reheat in a skillet, and add a splash of water if needed.
