Fragrant Lemongrass Chicken Pho

2 stalks lemongrass, trimmed and smashed

1 onion, halved

4 cloves garlic, smashed

1-inch piece of ginger, sliced

8 cups chicken broth

1 tablespoon fish sauce

1 tablespoon soy sauce

1 teaspoon sugar

5 whole star anise

2 whole cloves

1 cinnamon stick

Salt and pepper to taste

For the Chicken:

1 lb boneless, skinless chicken thighs

1 tablespoon vegetable oil

1 teaspoon ground coriander

Salt and pepper to taste

For Garnishing:

Fresh basil leaves

Bean sprouts

Lime wedges

Sliced jalapeños (optional)

Chopped cilantro

Sliced green onions

Cooked rice noodles (about 8 oz, vermicelli type)

Instructions
 

Prepare the Broth:

    - In a large pot, heat the chicken broth over medium heat. Add the smashed lemongrass, halved onion, smashed garlic, and sliced ginger.

      - Stir in the fish sauce, soy sauce, sugar, star anise, cloves, and cinnamon stick. Bring to a gentle simmer and let it cook for about 30-40 minutes to infuse the flavors.

        - Taste the broth and adjust seasoning with salt and pepper as needed. Once done, strain the broth through a fine mesh sieve into another pot to remove any solids and keep it warm.

          Cook the Chicken:

            - Season the chicken thighs with ground coriander, salt, and pepper. In a medium skillet, heat the vegetable oil over medium-high heat.

              - Add the chicken thighs and sear each side until golden brown and cooked through, about 5-6 minutes per side. Remove from the skillet and let rest for a few minutes before slicing into thin strips.

                Cook the Rice Noodles:

                  - Prepare the rice noodles according to package instructions. Drain and set aside.

                    Assemble the Pho:

                      - In serving bowls, place a handful of cooked rice noodles. Top with slices of the seared chicken.
