Fluffy Scrambled Egg and Cheddar Biscuit Bake

4 large eggs

1/2 cup milk

1 cup shredded sharp cheddar cheese

1 cup diced bell peppers (red and green)

1 cup diced cooked ham or cooked bacon (optional)

1 teaspoon salt

1/2 teaspoon black pepper

1/4 teaspoon paprika

1 can (16 oz) refrigerated biscuit dough (flaky or buttermilk)

1/4 cup chopped fresh chives (for garnish)

Cooking spray or butter (for greasing)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish with cooking spray or butter.

    Prepare the Egg Mixture: In a large mixing bowl, crack the eggs and whisk them together. Add the milk, salt, black pepper, and paprika, and whisk until well combined. Stir in the diced bell peppers and the shredded cheddar cheese (reserving a small amount for topping if desired).

      Cook the Egg Mixture: Heat a non-stick skillet over medium heat and lightly grease it. Pour in the egg mixture and cook gently, stirring frequently, until just set, about 3-4 minutes. Be careful not to overcook; the eggs should still be creamy. Remove from heat and set aside.

        Prepare the Biscuit Base: Open the can of biscuit dough and separate each biscuit. Cut each biscuit into quarters. Layer the biscuit pieces evenly over the bottom of the greased baking dish.

          Layer the Egg Mixture: Pour the fluffy scrambled eggs evenly over the biscuit pieces in the baking dish. If using, scatter the diced ham or bacon over the top of the eggs. Sprinkle the reserved cheddar cheese on top for extra cheesiness.

            Bake: Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the biscuits are golden brown and cooked through, and the eggs are fully set.
