Ingredients

1 ½ cups all-purpose flour

1 tablespoon baking powder

1 teaspoon baking soda

1 teaspoon cinnamon

½ teaspoon nutmeg

½ teaspoon ground ginger

¼ teaspoon ground cloves

½ teaspoon salt

1 cup canned pumpkin puree (not pumpkin pie filling)

2 large eggs

½ cup milk (dairy or non-dairy)

¼ cup vegetable oil or melted butter

1 teaspoon vanilla extract

Optional toppings: whipped cream, maple syrup, chopped pecans, or powdered sugar

Instructions

Preheat the Waffle Iron: Plug in your waffle iron to preheat while you prepare the batter. Most waffle irons have a ready indicator; ensure it's heated as per the manufacturer's instructions.

Mix Dry Ingredients: In a large mixing bowl, combine the all-purpose flour, baking powder, baking soda, cinnamon, nutmeg, ginger, cloves, and salt. Whisk them together until well incorporated.

Combine Wet Ingredients: In another bowl, whisk together the pumpkin puree, eggs, milk, vegetable oil (or melted butter), and vanilla extract until smooth and uniform.

Combine Mixtures: Gently pour the wet ingredients into the dry ingredients and stir gently to combine. Be careful not to over-mix; a few lumps are totally okay! The goal is a fluffy batter.

Cook Waffles: Lightly grease the waffle iron with cooking spray or brush with oil. Pour enough batter into the preheated waffle iron to cover about two-thirds of the surface. Close the lid and cook according to your waffle iron's instructions (usually around 4-5 minutes). Wait until the waffles are golden brown and crispy.

Serve: Carefully remove the waffles and place them on a serving plate. Keep them warm in a low oven if making multiple batches. Serve with your favorite toppings such as whipped cream, maple syrup, chopped pecans, or a sprinkle of powdered sugar.

Enjoy: Dig into your fluffy pumpkin spice waffles and savor the cozy fall flavors!
