1 cup all-purpose flour

2 tablespoons granulated sugar

2 teaspoons baking powder

1 teaspoon baking soda

1/2 teaspoon salt

1 cup buttermilk, at room temperature

1 large egg

2 tablespoons unsalted butter, melted (plus more for cooking)

1 teaspoon vanilla extract

Instructions
 

Prepare the Dry Ingredients: In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined. Set aside.

    Mix the Wet Ingredients: In another bowl, combine the buttermilk, egg, melted butter, and vanilla extract. Whisk until smooth and well incorporated.

      Combine Both Mixtures: Pour the wet ingredients into the bowl with the dry ingredients. Stir gently with a spatula or a whisk until just combined. Be careful not to overmix; a few lumps are okay.

        Preheat the Pan: Heat a non-stick skillet or griddle over medium heat. Lightly grease it with a small amount of butter.

          Cook the Pancakes: Pour about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface and the edges look set (about 2-3 minutes). Carefully flip the pancakes and cook for another 1-2 minutes until golden brown.

            Keep Warm: Transfer the cooked pancakes to a plate and keep them warm in a preheated oven set to 200°F (95°C) while you continue cooking the remaining batter.
