1 cup rolled oats

1 cup milk (or almond milk for a dairy-free option)

1 cup whole wheat flour

1/2 cup brown sugar

1/4 cup granulated sugar

1 tablespoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1 teaspoon cinnamon

1/3 cup vegetable oil (or melted coconut oil)

1 large egg

1 teaspoon vanilla extract

1 1/2 cups fresh or frozen blueberries

Optional: 1/4 cup chopped nuts (like walnuts or pecans)

Instructions
 

Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners. If you don’t have liners, lightly grease the muffin cups.

    Soak the oats: In a large bowl, combine the rolled oats and milk. Let them soak for about 15 minutes to soften.

      Mix the dry ingredients: In a separate bowl, whisk together the whole wheat flour, brown sugar, granulated sugar, baking powder, baking soda, salt, and cinnamon until well combined.

        Combine wet ingredients: In the bowl with the soaked oats, add the vegetable oil, egg, and vanilla extract. Mix until everything is combined.

          Combine wet and dry: Gradually add the dry ingredient mixture to the oat mixture. Stir gently until just combined. Be careful not to overmix; it’s okay if the batter is a bit lumpy.

            Add blueberries and nuts: Fold in the blueberries and chopped nuts (if using) until evenly distributed throughout the batter.
