1 lb boneless, skinless chicken breasts, diced

1/2 cup all-purpose flour

1/2 cup cornmeal

1/2 cup breadcrumbs

2 large eggs, beaten

1 cup cabbage, shredded

1/2 cup carrots, julienned

1/4 cup green onions, chopped

1/4 cup mayonnaise

2 tablespoons sriracha sauce (adjust to taste)

2 tablespoons soy sauce

2 teaspoons honey

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper, to taste

4 large tortillas or wraps

Cooking oil, for frying

Prepare the Chicken: In a medium bowl, season the diced chicken with garlic powder, onion powder, salt, and pepper. Set aside.

    Breading Station: Set up three shallow dishes—one with flour, one with beaten eggs, and one with a mixture of cornmeal and breadcrumbs.

      Bread the Chicken: Dredge the seasoned chicken pieces first in the flour, shaking off any excess, then dip them into the beaten egg, and finally coat them in the cornmeal-breadcrumb mixture. Make sure each piece is well coated.

        Fry the Chicken: In a large skillet, heat about 1/4 inch of cooking oil over medium-high heat. Once hot, carefully add the breaded chicken pieces in batches, ensuring not to overcrowd the pan. Fry until golden brown and cooked through, about 4-5 minutes per side. Transfer the cooked chicken to a paper towel-lined plate to drain excess oil.

          Make the Sauce: In a small bowl, whisk together the mayonnaise, sriracha, soy sauce, and honey until smooth. Adjust the sriracha according to your preferred spice level.

            Prepare the Wraps: On a tortilla, layer a handful of shredded cabbage, julienned carrots, fried chicken pieces, and a drizzle of the spicy mayo sauce. Top with fresh green onions.

              Wrap it Up: Fold in the sides of the tortilla and then roll from the bottom to the top, securing all the fillings inside. Repeat with remaining tortillas and ingredients.

                Serve: Slice the wraps in half or into bite-sized pieces. Serve immediately with extra dipping sauce on the side, if desired.
