8 oz (225g) pasta (your choice: fettuccine, pappardelle, or spaghetti)

1 cup fig jam

2 tbsp olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 tsp fresh rosemary, chopped (or ½ tsp dried)

½ tsp red pepper flakes (adjust to taste)

½ cup heavy cream

½ cup grated parmesan cheese, plus more for serving

Salt and pepper to taste

Fresh arugula or spinach for garnish

Chopped walnuts or pecans for crunch (optional)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the pasta according to package directions until al dente. Reserve ½ cup of the pasta water, then drain the pasta and set aside.

    Sauté the Aromatics: In a large skillet over medium heat, add the olive oil. Once hot, add the chopped onion and cook until translucent, about 4-5 minutes. Stir in the minced garlic, chopped rosemary, and red pepper flakes, cooking for an additional minute until fragrant.

      Add Fig Jam: Reduce the heat to low and stir in the fig jam. Mix well, allowing it to melt and combine with the onion and garlic mixture.

        Cream it Up: Slowly pour in the heavy cream, mixing thoroughly until the sauce is creamy and smooth. Let it simmer for about 2-3 minutes, just until heated through. If the sauce is too thick, gradually add some reserved pasta water until desired consistency is reached.

          Mix in Pasta: Add the cooked pasta to the skillet and toss well to coat the noodles in the sauce. Sprinkle in the parmesan cheese and stir until melted and evenly distributed. Season with salt and pepper to taste.
