12 oz rigatoni pasta

1 cup feta cheese, crumbled

1 cup dried cranberries

1 cup cherry tomatoes, halved

1/2 cup red onion, finely chopped

1/4 cup fresh basil leaves, chopped

1/4 cup olive oil

2 tablespoons balsamic vinegar

1 teaspoon Dijon mustard

Salt and pepper to taste

Optional: 1/4 cup toasted walnuts or pecans for crunch

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the rigatoni according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Let cool.
