Feta and Cucumber Chickpea Salad

1 can (15 oz) chickpeas, drained and rinsed

1 cup of cucumber, diced

1 cup of cherry tomatoes, halved

1/2 cup red onion, finely chopped

1/2 cup feta cheese, crumbled

1/4 cup fresh parsley, chopped

1/4 cup extra-virgin olive oil

2 tablespoons red wine vinegar

1 garlic clove, minced

Salt and pepper to taste

Optional: 1/4 teaspoon dried oregano

Instructions
 

In a large mixing bowl, combine the chickpeas, diced cucumber, halved cherry tomatoes, and chopped red onion. Toss gently to mix.

    Add the crumbled feta cheese and fresh parsley to the bowl. Carefully fold in the ingredients until evenly distributed.
