Ingredients

1 lb Italian sausage (mild or spicy, your choice), sliced into 1-inch pieces

1.5 lbs baby potatoes, halved or quartered

1 medium onion, diced

3 cloves garlic, minced

2 cups kale or spinach, chopped (optional for added nutrition)

1 cup chicken broth

1 tsp dried thyme

1 tsp dried rosemary

1/2 tsp paprika

1/2 tsp salt (adjust to taste)

1/4 tsp black pepper

1 tbsp olive oil

Fresh parsley, chopped (for garnish)

Instructions

Prep the Ingredients: Start by washing and cutting the baby potatoes. Slice the sausage, dice the onion, and mince the garlic. If you’re adding kale or spinach, chop it roughly and set aside.

Brown the Sausage: In a skillet over medium-high heat, add olive oil. Once hot, add the sausage pieces and cook until browned on all sides (about 5-7 minutes). This step adds depth to the flavor.

Layer Ingredients in the Crockpot: In the crockpot, add the halved potatoes first. Then add the diced onion, minced garlic, and browned sausage. If you’re using kale or spinach, toss that in as well.

Mix Seasonings: In a separate bowl, combine chicken broth, thyme, rosemary, paprika, salt, and pepper. Stir well to combine.

Combine: Pour the seasoning mixture over the layered ingredients in the crockpot, ensuring everything is evenly coated.

Cook: Cover the crockpot with its lid and set it to low heat. Let it cook for 6-8 hours or on high for 3-4 hours. The potatoes should be tender, and the flavors will meld beautifully.

Serve: Once cooked, give everything a good stir. Taste and adjust seasoning if necessary. Serve hot, garnished with fresh parsley. Enjoy this warm, hearty dish that captures the essence of fall!
