Fall Crockpot Sausage and Kale Stew

1 lb Italian sausage (sweet or spicy, based on preference)

1 medium onion, diced

3 cloves garlic, minced

4 medium carrots, sliced

3 medium potatoes, diced (Yukon Gold or red potatoes work well)

4 cups chicken broth

2 cups kale, stems removed and chopped

1 can (15 oz) diced tomatoes, undrained

1 teaspoon dried thyme

1 teaspoon dried oregano

½ teaspoon red pepper flakes (optional)

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Brown the Sausage: In a large skillet over medium heat, add the olive oil. Once hot, add the Italian sausage and cook until browned. Break it up into smaller pieces with a spatula as it cooks. Transfer the browned sausage to the crockpot.

    Sauté Vegetables: In the same skillet, add the diced onion and minced garlic. Sauté for about 3-4 minutes until the onion is translucent. Add the carrots and diced potatoes, cooking for an additional 4-5 minutes. Transfer this vegetable mixture to the crockpot.

      Combine Ingredients: To the crockpot, add the chicken broth, chopped kale, diced tomatoes, thyme, oregano, red pepper flakes (if using), and season with salt and pepper. Stir everything together until well combined.

        Cook: Cover the crockpot with the lid and cook on low for 6-8 hours or on high for 3-4 hours, until the vegetables are tender and the flavors meld together beautifully.
