Ingredients

2 cups elbow macaroni

4 cups broccoli florets (fresh or frozen)

4 cups sharp cheddar cheese, shredded

1 cup cream cheese, cubed

3 cups vegetable broth

1 cup whole milk

1 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon paprika

½ teaspoon black pepper

½ teaspoon salt (to taste)

1 tablespoon Dijon mustard

1 tablespoon olive oil

Fresh parsley, chopped (for garnish)

Instructions

Prepare the Pasta: In a large bowl, combine the elbow macaroni, garlic powder, onion powder, paprika, black pepper, and salt. Stir everything to evenly coat the pasta.

Layer the Ingredients: In the crockpot, add the vegetable broth and whole milk. Place the dry pasta mixture on top, spreading it evenly over the liquid.

Add Broccoli: Place the broccoli florets on top of the pasta layer. Do not stir; allow the broth to permeate the pasta from below.

Cheese and Cream Cheese: Next, add the cream cheese in cubes and sprinkle the shredded cheddar and grated Parmesan cheese over the top.

Condiment Magic: Drizzle the Dijon mustard over the cheese layer and finish off with a splash of olive oil to add flavor.

Cook: Cover the crockpot and set it to low for 2 to 2.5 hours, stirring gently halfway through. The macaroni should be tender, and the cheese melted into a creamy goodness.

Final Touch: Once cooked, check for creaminess; if it's too thick, you can stir in a little extra milk until you reach your desired consistency.

Serve: Dish out the creamy mac and cheese to bowls and garnish with freshly chopped parsley. Enjoy the warmth and comfort of this fall-inspired dish!
