Fall Crockpot Chicken and Stuffing

4 boneless, skinless chicken breasts

1 (12 oz) package of stuffing mix (herbed or traditional)

1 (15 oz) can of chicken broth

1 medium onion, diced

2 celery stalks, diced

2 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 teaspoon sage

Salt and pepper to taste

1 cup fresh or frozen mixed vegetables (carrots, peas, and corn)

1/2 cup cream of chicken soup (optional for creaminess)

Fresh parsley, for garnish

Instructions
 

Prep the Chicken: Season the chicken breasts with salt, pepper, thyme, rosemary, and sage on both sides. Place them in a crockpot.

    Prepare the Vegetables: In a medium skillet over medium heat, sauté the diced onion and celery until softened, about 5 minutes. Add the minced garlic and cook for an additional minute, until fragrant.

      Mix the Stuffing: In a large bowl, combine the stuffing mix, chicken broth, mixed vegetables, and optional cream of chicken soup. Stir until well-mixed.

        Assemble in the Crockpot: Pour the stuffing mixture evenly over the seasoned chicken breasts in the crockpot.

          Cook: Cover and cook on low for 6 to 7 hours or on high for 3 to 4 hours, until the chicken is cooked through and tender.

            Optional Crispiness: If you prefer a crispy topping, switch the crockpot to high for the last 30 minutes of cooking, allowing the stuffing to crisp up.
