8 large eggs

1 cup whole milk

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon garlic powder

1 teaspoon onion powder

1 cup diced bell peppers (red, green, or yellow)

1 cup cooked breakfast sausage or chorizo, crumbled

1 can (15 oz) black beans, drained and rinsed

1 cup corn (frozen or canned)

1-2 fresh jalapeños, sliced (optional for added heat)

2 cups grated cheese (cheddar or a Mexican blend)

1/4 cup fresh cilantro or green onions, chopped (for garnish)

Instructions
 

Preheat Oven: Preheat your oven to 375°F (190°C) and lightly grease a 9x13 inch baking dish.

    Prep the Egg Mixture: In a large mixing bowl, whisk together the eggs, milk, salt, pepper, garlic powder, and onion powder until well combined.

      Layer the Ingredients:

        - In the greased baking dish, evenly spread the diced bell peppers, crumbled sausage or chorizo, black beans, corn, and jalapeños if using.

          - Pour the egg mixture over the layered ingredients. Use a spatula to gently ensure the mixture is evenly distributed throughout.

            Add Cheese: Sprinkle the grated cheese evenly on top of the casserole mixture.

              Bake: Place the dish in the preheated oven and bake for 35-45 minutes, or until the egg is set in the center and the top is golden and bubbly. A toothpick inserted in the middle should come out clean.
