Easy Zucchini Pasta Bake

4 medium zucchinis, spiraled into zoodles or sliced thinly

2 cups cooked pasta (penne or rotini works great)

1 cup marinara sauce

1 cup ricotta cheese

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and pepper to taste

Fresh basil leaves, for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare Zucchini: If you're using zoodles, lightly sauté them in a pan over medium heat for about 3-4 minutes until just softened. If using thinly sliced zucchini, you can layer them raw.

      Mix Ingredients: In a large mixing bowl, combine the cooked pasta, marinara sauce, ricotta cheese, minced garlic, dried oregano, dried basil, salt, and pepper. Stir until well combined.

        Layer the Bake: In a greased 9x13-inch baking dish, spread half of the pasta mixture on the bottom. Layer half of the zucchini over the pasta. Repeat with the remaining pasta and zucchini.

          Add Cheese: Sprinkle the shredded mozzarella and grated Parmesan evenly over the top of the bake.

            Bake: Cover the dish with aluminum foil and bake in the preheated oven for 20 minutes. Then, remove the foil and bake for an additional 15-20 minutes or until the cheese is bubbly and golden brown.

              Garnish and Serve: Once done, let the dish rest for 5-10 minutes. Garnish with fresh basil leaves if desired, then slice and serve warm!
