Easy Vegetable Beef Soup

Ingredients
  

1 lb (450g) beef stew meat, cut into 1-inch pieces

4 cups beef broth

2 medium carrots, diced

2 celery stalks, diced

1 medium onion, chopped

3 cloves garlic, minced

2 medium potatoes, diced

1 cup green beans, trimmed and cut into 1-inch pieces

1 can (14.5 oz) diced tomatoes, with juice

2 tsp Worcestershire sauce

1 tsp dried basil

1 tsp dried thyme

Salt and pepper, to taste

2 tbsp olive oil

1 cup frozen peas (optional)

Fresh parsley, chopped (for garnish)

Instructions
 

Sear the Beef:

    In a large pot or Dutch oven, heat the olive oil over medium-high heat. When hot, add the beef stew meat and season with salt and pepper. Sear the beef until browned on all sides, about 5-7 minutes. Remove the beef and set aside.

      Sauté Aromatics:

        In the same pot, add the chopped onion, carrots, and celery. Sauté for about 5 minutes or until the vegetables have softened. Add the minced garlic and cook for an additional 1-2 minutes.

          Combine Ingredients:

            Return the browned beef to the pot. Add the diced tomatoes (with juice), beef broth, diced potatoes, green beans, Worcestershire sauce, basil, thyme, and more salt and pepper to taste.

              Simmer the Soup:

                Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let it simmer for about 1 hour, stirring occasionally, until the beef is tender and the flavors meld. If using, add the frozen peas during the last 10 minutes of cooking.

                  Adjust Seasoning:

                    Taste the soup and adjust seasoning if necessary. If you prefer a thicker soup, you can mash some potatoes against the side of the pot.

                      Serve:

                        Ladle the soup into bowls, garnish with fresh parsley, and enjoy warm with a slice of crusty bread!
