Easy Turkey and Sweet Potato Shepherd's Pie

For the Sweet Potato Mash:

2 large sweet potatoes, peeled and cubed

2 tablespoons unsalted butter

½ cup milk (or plant-based alternative)

Salt and pepper to taste

1 teaspoon cinnamon (optional)

For the Turkey Filling:

1 pound ground turkey

1 medium onion, diced

2 cloves garlic, minced

1 cup carrots, diced

1 cup frozen peas

1 tablespoon tomato paste

1 cup chicken broth

1 teaspoon Worcestershire sauce

1 teaspoon dried thyme

Salt and pepper to taste

2 tablespoons olive oil

Instructions
 

Prepare the Sweet Potatoes:

    - In a large pot, bring salted water to a boil. Add the cubed sweet potatoes and cook until tender, about 15-20 minutes. Drain well.

      - In the same pot, add the butter and milk to the sweet potatoes. Mash until smooth and creamy. Season with salt, pepper, and cinnamon (if using). Set aside.

        Cook the Turkey Filling:

          - In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.

            - Add the minced garlic and cook for an additional minute until fragrant.

              - Stir in the ground turkey, breaking it apart with a spoon. Cook until browned, about 6-8 minutes.

                - Add diced carrots and cook for another 5 minutes until they begin to soften.

                  - Mix in the tomato paste, chicken broth, Worcestershire sauce, thyme, salt, and pepper. Simmer for 5-7 minutes, allowing the mixture to thicken slightly. Stir in the frozen peas at the end and remove from heat.

                    Assemble the Shepherd's Pie:

                      - Preheat your oven to 400°F (200°C).

                        - In a greased baking dish, spread the turkey filling evenly. Top with the sweet potato mash, spreading it out evenly with a spatula.

                          - Optional: For a golden top, create decorative peaks in the sweet potato mash with a fork.

                            Bake:

                              - Place the baking dish in the preheated oven and bake for 20-25 minutes, or until the top is slightly golden and warmed through.

                                Serve:
