Easy Turkey and Black Bean Enchiladas

1 lb ground turkey

1 can (15 oz) black beans, rinsed and drained

1 cup corn kernels (frozen or fresh)

1 small onion, diced

2 cloves garlic, minced

1 tsp cumin

1 tsp chili powder

1 cup salsa (your favorite variety)

8-10 corn tortillas

1 cup shredded cheese (cheddar or Mexican blend)

½ cup chopped fresh cilantro (optional, for garnish)

Sour cream (optional, for serving)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Turkey: In a large skillet over medium heat, add the ground turkey and cook until browned, about 5-7 minutes. Stir occasionally to break up the meat.

      Add Vegetables: Add the diced onion and minced garlic to the skillet, cooking for an additional 3-4 minutes until the onion is translucent.

        Mix in Beans and Corn: Stir in the black beans, corn, cumin, chili powder, and half of the salsa. Let this mixture simmer for 5 minutes to meld the flavors. Remove from heat.

          Fill the Tortillas: In a separate dish, take a corn tortilla, add about ¼ cup of the turkey-bean mixture in the center, sprinkle with a tablespoon of cheese, and roll it up. Place it seam-side down in a greased baking dish. Repeat with remaining tortillas.

            Top with Salsa & Cheese: Once all enchiladas are in the dish, pour the remaining salsa over the top, then sprinkle with the leftover cheese.

              Bake: Cover with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.

                Garnish and Serve: Remove from the oven, let cool for a few minutes, and garnish with fresh cilantro if desired. Serve with sour cream on the side.
