Ingredients

1 ½ cups of crushed graham crackers

½ cup unsalted butter, melted

2 cups of strawberry ice cream, softened

2 cups of vanilla ice cream, softened

2 cups of fresh strawberries, hulled and sliced

½ cup of whipped cream (for topping)

¼ cup of chocolate syrup (optional, for drizzling)

Fresh mint leaves (for garnish)

Instructions

Prepare the Crust:

    - In a mixing bowl, combine the crushed graham crackers and melted butter until well-blended.

      - Press the mixture evenly into the bottom of a 9-inch springform pan to create the crust. Place it in the freezer for about 10 minutes to set.

        Layer the Ice Cream:

          - Remove the crust from the freezer.

            - Scoop the softened strawberry ice cream and spread it evenly over the crust. Ensure an even layer and smooth the top with a spatula.

              - Place the cake back in the freezer for about 30 minutes to firm up.

                Add the Vanilla Layer:

                  - Once the strawberry layer is firm, take out the cake and spread the softened vanilla ice cream over the strawberry layer, smoothing it out.

                    - Scatter the sliced fresh strawberries evenly on top of the vanilla ice cream, gently pressing them in for a nice touch.

                      Freeze and Finish:

                        - Cover the cake with plastic wrap or a lid and freeze for at least 4 hours, or until fully set.

                          - When ready to serve, whip up the whipped cream until soft peaks form, then lightly spread it over the top of the ice cream cake.

                            Garnish:

                              - Drizzle some chocolate syrup on top (if using), and garnish with fresh mint leaves for presentation.

                                Serve:

                                  - Carefully run a knife around the edges of the springform pan to release the cake before removing the springform. Slice into wedges and serve immediately.
