1 lb (450g) fresh shrimp, peeled and deveined

1 cup fresh lime juice (about 8 limes)

1 medium red onion, finely diced

1 medium cucumber, finely diced

1 ripe avocado, diced

1 medium tomato, diced (seeds removed)

1 jalapeño pepper, finely chopped (seeds removed for less heat)

½ cup fresh cilantro, chopped

Salt and pepper, to taste

1 tsp olive oil

Tortilla chips or mini avocado boats for serving

Prepare the Shrimp: In a medium bowl, combine the fresh shrimp with the lime juice. Make sure the shrimp are completely submerged in the juice. Cover and refrigerate for about 30 minutes, or until the shrimp turn pink and opaque, indicating they're 'cooked' by the lime juice.

    Mix the Vegetables: In a separate large bowl, combine the diced red onion, cucumber, avocado, tomato, jalapeño, and cilantro. Drizzle with olive oil, then season with salt and pepper. Toss gently to combine.

      Combine: Once the shrimp is ready, drain about half of the lime juice (you want some to keep everything moist) and add the cooked shrimp to the vegetable mixture. Gently fold the shrimp into the veggie medley until everything is well mixed.
