Easy Shrimp Cakes with Lemon Aioli

Ingredients
  

1 pound fresh shrimp, peeled and deveined

1 cup breadcrumbs (preferably panko)

1/2 cup diced bell pepper (red or yellow)

1/4 cup green onions, sliced

1 egg, beaten

2 tablespoons mayonnaise

1 tablespoon Dijon mustard

1 teaspoon garlic powder

1 teaspoon paprika

Salt and pepper, to taste

2 tablespoons fresh parsley, chopped

1/4 cup flour (for coating)

2 tablespoons olive oil (for frying)

Lemon Aioli:

1/2 cup mayonnaise

2 tablespoons fresh lemon juice

1 teaspoon lemon zest

1 garlic clove, minced

Salt and pepper, to taste

Instructions
 

Prepare Shrimp: Chop the shrimp into small pieces and place them in a large mixing bowl.

    Mix Ingredients: Add panko breadcrumbs, diced bell pepper, green onions, beaten egg, mayonnaise, Dijon mustard, garlic powder, paprika, salt, pepper, and parsley to the bowl. Mix until all ingredients are well combined.

      Shape Cakes: With your hands, form the shrimp mixture into small patties, about 2 to 3 inches in diameter. You should be able to form about 8 to 10 cakes.

        Coat with Flour: Lightly coat each shrimp cake with flour on both sides and set them aside on a plate.

          Make Lemon Aioli: In a small bowl, combine the mayonnaise, lemon juice, lemon zest, minced garlic, and a pinch of salt and pepper. Mix well and set aside.

            Cook Shrimp Cakes: Heat olive oil in a skillet over medium heat. Once hot, add the shrimp cakes in batches (to avoid overcrowding) and cook for 3-4 minutes on each side or until golden brown and crispy. Remove and drain on paper towels.

              Serve: Place the shrimp cakes on a serving platter and drizzle with lemon aioli or serve it on the side for dipping.
