Ingredients

1 cup warm milk (110°F to 115°F)

1 packet (2 ¼ teaspoons) active dry yeast

3 tablespoons granulated sugar

3 tablespoons unsalted butter, melted

1 teaspoon sea salt

3 cups all-purpose flour (plus extra for dusting)

1/4 cup baking soda

1 large egg, beaten (for egg wash)

Coarse sea salt, for sprinkling

Instructions

In a mixing bowl, combine the warm milk, active dry yeast, and granulated sugar. Allow to sit for about 5-10 minutes until frothy, indicating the yeast is active.

Stir in the melted butter and sea salt. Gradually mix in the flour, one cup at a time, until a soft dough forms.

Turn the dough onto a floured surface and knead for about 5-7 minutes until smooth and elastic.

Place the dough in a lightly greased bowl, cover with a clean kitchen towel, and let it rise in a warm place for about 1 hour or until doubled in size.

Preheat your oven to 400°F (200°C). Line a baking tray with parchment paper.

Once risen, punch down the dough and divide it into 12 equal pieces. Roll each piece into a small ball and arrange them on the prepared baking tray, leaving a little space between each roll.

In a large pot, bring 8 cups of water to a boil and add the baking soda. Carefully lower each dough ball into the boiling water for about 30 seconds, flip them halfway through. This step gives the pretzel rolls their chewy texture.

Remove the rolls and place them back on the baking tray. Brush each roll with the beaten egg, then sprinkle with coarse sea salt.

Bake in the preheated oven for 12-15 minutes or until golden brown.

Once baked, allow the rolls to cool slightly before serving. Enjoy them warm and fresh!
