Easy Peach Cobbler with Ice Cream

4 cups fresh peaches, peeled and sliced (or canned peaches, drained)

1 cup granulated sugar, divided

1 tablespoon lemon juice

1 teaspoon ground cinnamon

1 cup all-purpose flour

1 tablespoon baking powder

1/2 teaspoon salt

1 cup whole milk

1/2 cup unsalted butter, melted

1 teaspoon vanilla extract

Preheat the Oven: Start by preheating your oven to 350°F (175°C).

    Prepare the Peaches: In a large bowl, combine the sliced peaches with 1/2 cup of sugar, lemon juice, and ground cinnamon. Toss gently to mix well. Let the mixture sit for about 10 minutes to allow the juices to develop.

      Make the Batter: In another bowl, whisk together the flour, remaining 1/2 cup sugar, baking powder, and salt. Pour in the milk, melted butter, and vanilla extract. Stir until just combined; the batter will be slightly lumpy.

        Assemble the Cobbler: Pour the batter into a greased 9x13-inch baking dish. Do not stir; just make sure the batter is evenly spread across the bottom. Spoon the peach mixture over the top, juices and all. Again, do not stir—the batter will rise around the peaches as it bakes.

          Bake: Place the baking dish in the preheated oven and bake for about 40-45 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.

            Serve: Once done, let the cobbler cool for a bit. Serve warm with a generous scoop of vanilla ice cream on top of each portion.
