Ingredients

1 lb (450g) boneless, skinless chicken thighs, diced

1 cup long-grain white rice

2 tablespoons olive oil

1 medium onion, chopped

3 cloves garlic, minced

1 bell pepper (any color), diced

1 can (14.5 oz) diced tomatoes with green chilies, undrained

1 can (15 oz) black beans, drained and rinsed

1 cup corn kernels (fresh, frozen, or canned)

1 teaspoon ground cumin

1 teaspoon smoked paprika

1/2 teaspoon chili powder

1/2 teaspoon salt (or to taste)

1/4 teaspoon black pepper

2 1/2 cups chicken broth

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions

Sauté the Chicken: In a large skillet or pan, heat the olive oil over medium heat. Add the diced chicken thighs and season with salt, pepper, cumin, smoked paprika, and chili powder. Cook until the chicken is browned on all sides, about 5-7 minutes. Remove chicken from the pan and set aside.

Cook Vegetables: In the same pan, add the chopped onion and cook for about 3 minutes until translucent. Add the minced garlic and diced bell pepper, stirring for an additional 2-3 minutes until softened.

Combine Ingredients: Return the browned chicken to the skillet. Add the rice, diced tomatoes with their juices, black beans, corn, and chicken broth. Stir well to combine all the ingredients.

Simmer: Bring the mixture to a boil. Once boiling, reduce the heat to low, cover the pan, and let it simmer for 20-25 minutes, or until the rice is tender and has absorbed the liquid. Avoid lifting the lid during cooking to ensure even cooking.

Fluff and Serve: Once cooked, remove the pan from heat and let it sit covered for an additional 5 minutes. Fluff the rice with a fork, garnish with fresh cilantro, and serve with lime wedges on the side.

Enjoy your delicious Spicy Fiesta Chicken & Rice, a flavorful meal that's sure to bring a smile to your dinner table!
