Ingredients

1 lb (450g) ground beef

2 packs of instant ramen noodles (discard the seasoning packets)

4 cups beef broth

2 cups water

3 tablespoons soy sauce

1 tablespoon sesame oil

1 tablespoon ginger, minced

2 cloves garlic, minced

1 medium onion, thinly sliced

1 cup carrots, julienned

1 cup bok choy, chopped

2 green onions, sliced (for garnish)

1 tablespoon chili paste or Sriracha (optional for heat)

Soft-boiled eggs (for topping, optional)

Sesame seeds (for garnish)

Instructions

Cook the Beef: In a large skillet over medium heat, add the ground beef. Cook until browned, breaking it apart with a spatula, about 5-7 minutes. Drain excess fat, if necessary.

Add Aromatics: Add the minced ginger, garlic, and sliced onion to the skillet. Sauté until the onion is translucent, about 3-4 minutes.

Build the Broth: Pour in the beef broth and water. Stir in the soy sauce and sesame oil. Bring the mixture to a simmer.

Cook the Vegetables: Add the julienned carrots and chopped bok choy to the simmering broth. Allow to cook for about 3-4 minutes until the vegetables are just tender.

Cook the Noodles: Add the ramen noodles to the skillet, stirring gently. Cook according to the package instructions, usually about 3-4 minutes, until noodles are tender.

Adjust Seasoning: If you prefer a spicier broth, you can add chili paste or Sriracha at this point. Stir well to combine.

Serve: Ladle the ramen beef mixture into bowls. Top with soft-boiled eggs if desired, garnish with sliced green onions, and sprinkle with sesame seeds for an extra touch.

Enjoy: Serve hot and relish this heartwarming bowl of easy ground beef ramen!
