Ingredients
  

For the Chicken Marinade:

1 lb boneless, skinless chicken thighs

3 tablespoons olive oil

4 cloves garlic, minced

2 teaspoons dried oregano

1 teaspoon ground cumin

1 lemon, juiced

Salt and black pepper to taste

For the Tzatziki Sauce:

1 cup Greek yogurt

1 small cucumber, grated and drained

2 cloves garlic, minced

1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)

1 tablespoon lemon juice

Salt to taste

For Assembly:

4 pita breads

Chopped lettuce

Sliced tomatoes

Sliced red onion

Crumbled feta cheese (optional)

Instructions
 

Marinate the Chicken:

    - In a bowl, whisk together olive oil, minced garlic, oregano, cumin, lemon juice, salt, and pepper.

      - Add the chicken thighs and ensure they are well-coated. Cover and refrigerate for at least 30 minutes (or up to 4 hours for best flavor).

        Prepare the Tzatziki Sauce:

          - In a medium bowl, combine Greek yogurt, grated cucumber, minced garlic, dill, lemon juice, and salt. Mix until well combined.

            - Taste and adjust salt, then refrigerate until ready to use.

              Cook the Chicken:

                - Preheat a grill or skillet over medium-high heat.

                  - Remove chicken from the marinade and cook for about 6-8 minutes on each side or until the chicken reaches an internal temperature of 165°F (75°C) and develops a nice char.

                    - Once cooked, remove chicken from heat and let it rest for a couple of minutes before slicing into strips.

                      Assemble the Gyros:

                        - Warm the pita breads on the grill or in a skillet for about 1 minute on each side.

                          - Spread a generous spoonful of tzatziki sauce on each pita.

                            - Top with sliced chicken, lettuce, tomatoes, onions, and crumbled feta cheese if desired.

                              - Roll up the pita to enclose the filling and serve immediately.
