1.5 lbs chicken breasts or thighs

1 cup low-sodium chicken broth

1 medium onion, diced

2 cloves garlic, minced

1 bell pepper, chopped (any color)

2 cups kale or spinach, roughly chopped

1 tsp paprika

1 tsp cumin

1 tsp dried oregano

Salt and pepper, to taste

8 whole wheat tortillas

1 cup shredded cheese (cheddar, mozzarella, or your favorite)

Optional toppings: avocado, sour cream, salsa, or hot sauce

Instructions
 

Prepare the Chicken: Place chicken breasts or thighs in the bottom of the crockpot. Season with salt, pepper, paprika, cumin, and oregano.

    Add the Vegetables: Scatter the diced onion, minced garlic, and chopped bell pepper over the chicken. Pour the chicken broth over the top to keep everything moist.

      Slow Cook: Cover the crockpot and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is tender and easily shreds with a fork.
