1 cup fresh corn kernels (can substitute with canned or frozen corn)

1 medium zucchini, grated and excess moisture squeezed out

1/2 cup all-purpose flour

1/4 cup cornmeal

2 large eggs, beaten

1/4 cup green onions, finely chopped

1/4 cup fresh parsley, chopped

1 teaspoon baking powder

1/2 teaspoon ground cumin

Salt and pepper to taste

1/4 cup grated Parmesan cheese (optional for added flavor)

Olive oil for frying

Prepare Ingredients: Start by squeezing the grated zucchini in a clean kitchen towel or cheesecloth to remove excess moisture. This will help keep your fritters from becoming soggy.

    Mix the Batter: In a large mixing bowl, combine the corn kernels, squeezed zucchini, flour, cornmeal, beaten eggs, chopped green onions, parsley, baking powder, ground cumin, salt, and pepper. If using, stir in Parmesan cheese until well-combined. The mixture should be thick but slightly moist.

      Heat the Oil: In a large skillet, heat 2-3 tablespoons of olive oil over medium heat until hot. You can test by adding a small spoonful of the batter; it should sizzle immediately.

        Form the Fritters: Using a tablespoon or small ice cream scoop, drop spoonfuls of the batter into the hot oil, flattening slightly with the back of the spoon. Be careful not to overcrowd the pan; you can work in batches if necessary.
