2 large bell peppers (any color)

2 cups cooked chicken, shredded or diced

1/2 cup Greek yogurt (or mayonnaise, for a richer taste)

1/4 cup celery, finely chopped

1/4 cup red onion, finely chopped

1/4 cup grapes, halved (or diced apples for a crunch)

1/4 cup walnuts or pecans, chopped (optional)

1 tablespoon Dijon mustard

1 tablespoon lemon juice

Salt and pepper, to taste

Fresh parsley or dill, for garnish

Prepare the Peppers: Start by preheating your oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds and membranes. Lightly brush the exterior with olive oil and season with a pinch of salt and pepper. Place the peppers upright in a baking dish.

    Make the Chicken Salad: In a mixing bowl, combine the shredded chicken, Greek yogurt, celery, red onion, grapes, and walnuts (if using). Add the Dijon mustard, lemon juice, and mix well. Season the mixture with salt and pepper to taste.

      Stuff the Peppers: Spoon the chicken salad mixture into each bell pepper, packing it lightly. Make sure the filling is heaped over the top of the peppers for a delicious presentation.
