Easy Chicken Fajita Quesadillas with Rice

2 boneless, skinless chicken breasts, sliced into thin strips

1 tablespoon olive oil

1 tablespoon taco seasoning

1 bell pepper (red, yellow, or green), sliced

1 medium onion, sliced

4 large flour tortillas

2 cups shredded cheese (cheddar or Mexican blend)

1 cup cooked rice (white or brown)

2 tablespoons fresh cilantro, chopped (for garnish)

Salsa or sour cream (for serving)

Instructions
 

Cook the Chicken: In a large skillet, heat the olive oil over medium-high heat. Add the sliced chicken and sprinkle with taco seasoning. Cook for about 5-7 minutes until the chicken is thoroughly cooked and no longer pink in the center. Remove the chicken from the skillet and set aside.

    Sauté the Veggies: In the same skillet, add the sliced bell pepper and onion. Sauté for 4-5 minutes until the veggies are tender and slightly caramelized.

      Combine and Fill: Add the cooked chicken back into the skillet with the veggies, mixing well to combine. Take one flour tortilla and sprinkle a layer of cheese over half of it, then top with a generous scoop of the chicken and veggie mixture, followed by another layer of cheese. Fold the tortilla over to create a half-moon shape.

        Cook the Quesadilla: Wipe down the skillet and return it to medium heat. Place the filled quesadilla in the skillet and cook for 3-4 minutes on each side until the tortilla is golden brown and the cheese is melted. Repeat with the remaining tortillas.

          Serve with Rice: On each plate, serve a side of cooked rice. Garnish the quesadilla with fresh cilantro and, if desired, serve with salsa or sour cream on the side.
