Easy Cheesy Chicken and Rice Casserole

2 cups cooked chicken, shredded (rotisserie chicken works great)

1 cup white rice, uncooked

4 cups chicken broth (or stock)

1 cup frozen mixed vegetables (peas, carrots, corn, etc.)

1 cup cheddar cheese, shredded (plus more for topping)

1 cup cream of chicken soup (or homemade equivalent)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

Salt and pepper to taste

2 tablespoons olive oil or butter

Fresh parsley, chopped (for garnish, optional)

Instructions
 

Preheat the Oven: Start by preheating your oven to 375°F (190°C).

    Sauté Vegetables: In a large skillet, heat olive oil or butter over medium heat. Add the frozen mixed vegetables and sauté for about 3-4 minutes until they begin to soften.

      Combine Ingredients: In a large mixing bowl, combine the shredded chicken, uncooked rice, sautéed vegetables, chicken broth, cream of chicken soup, garlic powder, onion powder, paprika, salt, and pepper. Stir until thoroughly mixed.

        Transfer to Baking Dish: Pour the mixture into a greased 9x13 inch baking dish. Spread it evenly.

          Add Cheese: Sprinkle 1 cup of shredded cheddar cheese over the top of the mixture. This will create a delicious cheesy layer as it bakes.

            Cover and Bake: Cover the baking dish with aluminum foil (to keep moisture in) and bake in the preheated oven for 30 minutes.

              Uncover and Finish Baking: After 30 minutes, carefully remove the foil and sprinkle an additional ½ cup of cheddar cheese (or more to your preference) on top. Return to the oven and bake uncovered for an extra 15-20 minutes or until the cheese is melted and bubbly, and the rice is tender.

                Rest and Serve: Once done, remove from the oven and let the casserole rest for about 5 minutes. Garnish with fresh chopped parsley if desired and serve warm!
