1 pound ground beef

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) black beans, drained and rinsed

1 can (14.5 oz) diced tomatoes (with juices)

1 small onion, diced

1 bell pepper (red or green), diced

2 cloves garlic, minced

2 tablespoons chili powder

1 teaspoon ground cumin

1 teaspoon smoked paprika

1 teaspoon salt (to taste)

½ teaspoon black pepper

1 cup beef broth or water

2 tablespoons olive oil

Optional toppings: shredded cheese, sour cream, diced green onions, cilantro

Instructions
 

Sauté the Veggies: In a large pot, heat the olive oil over medium heat. Add the diced onion and bell pepper. Sauté for about 3-4 minutes until softened, then add the minced garlic and cook for an additional minute.
