Easy Balsamic Vinaigrette Pasta Bake

12 oz penne pasta

1 cup cherry tomatoes, halved

1 zucchini, diced

1 bell pepper, diced

1 cup fresh spinach

1 cup mozzarella cheese, shredded

1/2 cup grated Parmesan cheese

1 cup cooked chicken, diced (optional for protein)

1/4 cup balsamic vinaigrette

2 cloves garlic, minced

1 tsp Italian seasoning

Salt and pepper to taste

Fresh basil leaves, for garnish

Instructions
 

Preheat Oven: Preheat your oven to 350°F (175°C).

    Cook the Pasta: In a large pot of salted boiling water, cook the penne pasta according to package directions until al dente. Drain and set aside.

      Sauté Vegetables: In a large skillet over medium heat, add a drizzle of olive oil and sauté the minced garlic for about 30 seconds, until fragrant. Then, add the diced zucchini and bell pepper, cooking for about 5 minutes until they start to soften. Add cherry tomatoes and spinach, continuing to cook until the spinach is wilted, about 2-3 more minutes. Season with Italian seasoning, salt, and pepper.

        Combine Ingredients: In a large mixing bowl, combine the cooked pasta, sautéed vegetables, our optional cooked chicken, half of the mozzarella cheese, and balsamic vinaigrette. Stir until everything is evenly coated.

          Prepare Baking Dish: Grease a 9x13-inch baking dish with cooking spray or a small amount of olive oil. Pour the pasta mixture into the dish, spreading it out evenly.

            Top with Cheese: Sprinkle the remaining mozzarella and Parmesan cheese over the top of the pasta mixture.

              Bake: Cover the baking dish with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.
