Easy Bacon and Spinach Pasta

8 oz (225g) spaghetti or your favorite pasta

4 slices of thick-cut bacon, chopped

2 cups fresh spinach, roughly chopped

3 cloves garlic, minced

1/2 cup heavy cream

1/2 cup grated Parmesan cheese

Salt and pepper to taste

2 tbsp olive oil

1/4 tsp red pepper flakes (optional)

Fresh basil leaves for garnish (optional)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the spaghetti according to package instructions until al dente. Reserve about 1/2 cup of pasta water, then drain and set aside.

    Cook the Bacon: In a large skillet over medium heat, add the chopped bacon and cook until crispy and browned, about 7-10 minutes. Using a slotted spoon, transfer the bacon to a paper towel-lined plate to drain excess fat, leaving the rendered fat in the skillet.

      Sauté Garlic and Spinach: In the same skillet, add olive oil if needed (to ensure about 1-2 tbsp remains). Add minced garlic and red pepper flakes (if using) to the skillet, sautéing for about 30 seconds until fragrant. Then, add the chopped spinach and cook until wilted, about 2-3 minutes.

        Make the Sauce: Reduce the heat to low and pour in the heavy cream, stirring to combine. Gradually add the grated Parmesan cheese, stirring until melted and the sauce is smooth. If the sauce is too thick, add reserved pasta water a little at a time until you reach your desired consistency.

          Combine Pasta and Sauce: Add the cooked pasta and crispy bacon to the skillet with the spinach cream sauce. Toss everything together until the pasta is well coated. Season with salt and pepper to taste.

            Serve: Divide the pasta onto plates, garnish with fresh basil leaves if desired, and sprinkle additional Parmesan cheese on top as desired. Serve warm and enjoy your Easy Bacon and Spinach Pasta!
