1 lb (450g) mixed mushrooms (cremini, shiitake, and button), sliced

2 tablespoons olive oil

2 tablespoons unsalted butter

1 medium onion, finely chopped

4 cloves garlic, minced

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

1 teaspoon fresh rosemary, chopped (or ½ teaspoon dried rosemary)

1 cup (240ml) Marsala wine

1 cup (240ml) vegetable broth

2 tablespoons soy sauce (or tamari for gluten-free)

1 teaspoon cornstarch mixed with 1 tablespoon water (optional, for thickening)

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Cooked pasta or creamy polenta, for serving

Instructions
 

Prepare the Ingredients: Clean and slice the mushrooms, finely chop the onion, and mince the garlic.

    Sauté the Aromatics: In a large skillet, heat the olive oil and 1 tablespoon of butter over medium heat. Add the onion and sauté until translucent, about 4-5 minutes. Stir in the garlic, thyme, and rosemary, and cook for another minute until fragrant.

      Cook the Mushrooms: Add the sliced mushrooms to the skillet. Increase the heat to medium-high and cook for 7-10 minutes, stirring occasionally, until the mushrooms have released their moisture and are golden brown.

        Add the Sauce Ingredients: Pour in the Marsala wine, scraping any brown bits off the bottom of the skillet. Let it simmer for about 2 minutes to reduce slightly.

          Build the Flavor: Add the vegetable broth and soy sauce to the skillet. Bring the mixture to a gentle boil, then reduce the heat to low. Let it simmer for 5-7 minutes to meld flavors.

            Thicken if Desired: If you prefer a thicker sauce, stir in the cornstarch mixture and cook for another minute until the sauce has thickened. Season with salt and pepper to taste.

              Finishing Touch: Remove from heat and stir in the remaining tablespoon of butter for a rich finish.

                Serve: Plate the mushroom Marsala over cooked pasta or creamy polenta. Garnish with fresh parsley and additional thyme if desired.
