2 boneless, skinless chicken breasts

1 cup uncooked brown rice

1 teaspoon olive oil

1 teaspoon chili powder

1 teaspoon ground cumin

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon smoked paprika

Salt and pepper to taste

1 can (15 oz) black beans, drained and rinsed

1 cup corn kernels (fresh or frozen)

1 cup diced tomatoes (fresh or canned)

1 avocado, diced

1 cup shredded romaine lettuce

½ cup shredded cheddar cheese

¼ cup fresh cilantro, chopped

Juice of 1 lime

Sour cream or Greek yogurt (optional, for serving)

Tortilla chips (optional, for serving)

Instructions
 

Marinate the Chicken: In a bowl, combine olive oil, chili powder, cumin, garlic powder, onion powder, smoked paprika, salt, and pepper. Coat the chicken breasts in the marinade and let them sit for at least 30 minutes (or up to 4 hours for more flavor) in the refrigerator.

    Cook the Rice: Rinse the brown rice under cold water. In a medium saucepan, bring 2 cups of water to a boil. Add the rice, then reduce heat to low, cover, and let it simmer for about 45 minutes or until the water is absorbed and the rice is tender. Fluff with a fork and set aside.

      Grill the Chicken: Preheat your grill or grill pan over medium-high heat. Once hot, add marinated chicken breasts and cook for about 6-7 minutes on each side, or until they reach an internal temperature of 165°F (74°C). Remove from grill and let rest for 5 minutes before slicing.

        Prepare the Bowl Ingredients: In a large bowl, combine the black beans, corn, diced tomatoes, avocado, romaine lettuce, shredded cheddar cheese, cilantro, and lime juice. Toss gently to mix.
