Ingredients
  

For the crepes:

1 cup all-purpose flour

2 large eggs

1 1/2 cups milk

2 tbsp melted butter

1/4 tsp salt

1 tbsp finely chopped fresh chives (optional)

For the seafood filling:

1 cup cooked shrimp, chopped

1 cup scallops, diced

1 cup cooked crab meat, shredded

2 tbsp olive oil

2 cloves garlic, minced

1/2 tsp red pepper flakes (optional)

1/2 cup heavy cream

1/2 cup white wine

1 tbsp lemon juice

2 tbsp chopped fresh parsley

Salt and pepper to taste

For the sauce:

1 cup heavy cream

1/4 cup grated Parmesan cheese

1 tbsp fresh dill, chopped

Salt and pepper to taste

Instructions
 

Make the crepe batter: In a mixing bowl, whisk together flour and salt. In a separate bowl, beat the eggs, then add milk and melted butter. Slowly pour the wet ingredients into the flour, whisking until smooth. If using, stir in chopped chives. Let the batter rest for at least 30 minutes.

    Cook the crepes: Heat a non-stick skillet over medium heat and lightly grease it with butter or oil. Pour about 1/4 cup of batter into the center of the skillet, swirling to coat the bottom evenly. Cook for 1-2 minutes until the edges begin to lift, then flip and cook for another minute. Repeat with the remaining batter, stacking the crepes on a plate.

      Prepare the seafood filling: In a large skillet, heat olive oil over medium heat. Add minced garlic and red pepper flakes, sauté for about 30 seconds until fragrant. Add shrimp, scallops, and crab meat; cook for 3-4 minutes until heated through. Pour in the white wine, allowing it to simmer for a minute. Stir in heavy cream, lemon juice, and chopped parsley. Season with salt and pepper to taste. Remove from heat.

        Make the sauce: In a small saucepan, heat heavy cream over medium-low heat. Stir in Parmesan cheese and dill, and simmer until slightly thickened. Season with salt and pepper.

          Assemble the crepes: Take a crepe and fill it with a generous portion of the seafood mixture, folding it delicately. Place the filled crepes on plates.

            Serve: Drizzle the creamy sauce over the crepes and garnish with additional parsley if desired. Serve immediately while warm.
