1 large cucumber, diced

2 ripe avocados, diced

1 cup cherry tomatoes, halved

1/4 red onion, thinly sliced

1/4 cup fresh cilantro, chopped

2 tablespoons olive oil

1 tablespoon lime juice

Salt and black pepper to taste

Optional: 1/4 teaspoon cayenne pepper for a kick

Prepare the Vegetables: Start by rinsing the cucumber and cherry tomatoes under cool water. Peel the cucumber if you prefer, then chop it into bite-sized pieces. Halve the cherry tomatoes and set aside.

    Slice the Avocados: Cut the avocados in half, remove the pit, and scoop the flesh out with a spoon. Dice the avocado into similar-sized pieces as the cucumber.

      Red Onion: Thinly slice the red onion and add it to a large mixing bowl. If you find the onion too pungent, soak the slices in cold water for 10 minutes before adding them to the salad.
