Crunchy Taco Lettuce Wraps

1 pound ground turkey or beef

1 packet taco seasoning (or homemade blend: chili powder, cumin, garlic powder, onion powder, paprika)

1 cup diced bell peppers (mixed colors)

1 can (15 oz) black beans, drained and rinsed

1 cup corn kernels (fresh, frozen, or canned)

1 cup cherry tomatoes, halved

1 avocado, diced

1 cup shredded cheddar cheese

1 cup salsa

1/4 cup fresh cilantro, chopped

1 head of iceberg or butter lettuce, leaves separated

Lime wedges, for serving

Salt and pepper to taste

Instructions
 

Cook the Meat: In a large skillet over medium heat, brown the ground turkey or beef until fully cooked, about 7-10 minutes. Use a wooden spoon to break it into crumbles.

    Add Seasoning: Stir in the taco seasoning, along with 1/4 cup of water, making sure everything is well coated. Let it simmer for about 5 minutes until the mixture thickens slightly.

      Combine Veggies: Add the diced bell peppers, black beans, and corn to the meat mixture. Stir and cook for an additional 3-4 minutes until the peppers are slightly softened.

        Assemble Lettuce Wraps: Take a lettuce leaf and spoon a generous amount of the meat and veggie mixture in the center. Top with cherry tomatoes, diced avocado, shredded cheese, a dollop of salsa, and a sprinkle of fresh cilantro.

          Serve with Lime: Squeeze fresh lime juice over the top for an extra zing. Fold the lettuce leaf around the filling like a taco and enjoy!

            Repeat Until Done: Continue assembling until all ingredients are used.
