2 large English cucumbers, thinly sliced

1 medium red onion, thinly sliced

1 bell pepper (red or yellow), thinly sliced

1 cup cherry tomatoes, halved

1/4 cup fresh cilantro, chopped

1/4 cup fresh mint, chopped

1/4 cup rice vinegar

2 tablespoons soy sauce

1 tablespoon sesame oil

2 teaspoons chili oil (adjust for spice level)

1 tablespoon honey or agave syrup

1 tablespoon freshly grated ginger

2 cloves garlic, minced

Salt and black pepper, to taste

1/4 cup roasted peanuts, chopped (for garnish)

1 tablespoon sesame seeds (for garnish)

Instructions
 

Prepare the Vegetables: In a large mixing bowl, combine the thinly sliced cucumbers, red onion, bell pepper, and cherry tomatoes. Set aside.
